mushrooms and wild rice

this is a family favorite(except Maureen, who doesn't care for mushrooms) i have also made it for my church group with positive reviews. at one time my signature dish!

ingredients:

2 tbls toasted sesame oil
2 tbls reduced sodium soy sauce
1 tbls grated fresh ginger
1 tbls minced garlic
4 tsp rice vinegar
1/2 tsp ground pepper
1 1/2 lbs mushrooms (i usually use baby bella's)
2 bunches scallions, chopped
1 tbls toasted sesame seeds
1 cup wild rice

prep:

cook wild rice

preheat oven to 450

combine oil, soy sauce, ginger, garlic, vinegar, ad pepper in a large bowl. Add mushrooms and scallions toss to coat.

add rice to baking dish, cover with mushroom mix, bake for 25 mins stirring a couple time.

toast sesame seeds in a small dry skillet, stir constantly, until golden, about 2 mins.

top the rice and shrooms with the toasted seeds.
