i dusted off the old cookbook and revisited this old classic, very good and seems very healthy!
1 onion chopped
1/2 red pepper chopped
2 cloves of garlic minced
1/2 cup quinoa
1 cup veg broth
1 tsp cumin
1/4 tsp cayenne pepper
frozen corn
black beans
fresh cilantro
cook quinoa in the veggie broth. season with cumin, cayenne pepper
saute onion, garlic, and pepper, add to quinoa. stir in corn, black beans, and cilantro
